oxidized cholesterol a cause for concern

Long time storage of egg protein powder and whey protein powder causes oxidization of the cholesterol in the product. As does high temperature storage. Dairy products usually is kept stored cool, but powdered milk is usually kept at room temperature. Oxidized cholesterol, when digested, is incorporated into LPL, and causes the inflammation in the arterial endothelium that leads to the production of arterial plaque. No amount of antioxidation supplements can negate the damage that have already been done. Thus, it is advisable that you avoid protein concentrates and if you buy protein isolates keep them stored in a refrigerator.
